Best Salsa Ever


I'm eating better than I ever have. I've lost eight pounds in two weeks, and my energy is up. I refuse, however, to give up tasty delicious food.  Fat is so worth it to me. So I resort to things like delicious salsa, which is chock full of vegetables and fiber... and flavor. Pair it with guacamole and a chicken/black bean quesadilla and you have a fantastic healthy meal.

Ingredients:

3 cans of Rotel Tomatoes with Diced Green Chilis (choose mild or spicy--I like spicy but my family are wimps)
1 tablespoon of minced garlic (or more if you can handle it)
1 1/2 tablespoons of salt
1/2 cup of sugar
1 teaspoon of cumin (what is cumin?)
1/2 cup of lime juice
1 green bell pepper
1 red bell pepper
1 serrano pepper
1 anaheim pepper
1 fresno pepper
1 jalapeno pepper
1/2 cup of cilantro (or as much as you like... once again, I prefer more, but my family likes less)

Chop all the peppers as finely as you can, then blend everything together in blender. Adjust flavors if you need to, and if you like it spicier, try different peppers.

So good you'll want to shoot me.
WARNING: If you wear contacts, don't chop peppers/handle lime juice with bare hands and then take out your contacts later. You will be feeling those peppers on your eyes for the next three days.

1/2 CUP sugar?! Whoa...really?! Just confirming!

Yes to the sugar. It really brings out some of the spicier, saltier flavors. If you're not sure then leave it out, but that's how much I put in!
